The original trees were brought into Chile from Spain by Agromillora Sur, subsidiary of our supplier in Spain the nursery AGROMILLORA. They had to undergo a two year compulsory quarantine supervised by the SAG (Servicio Agricola y Ganadero)and they comply with all the very strict Chilean regulations.

The varieties planted in El Ingenio are :
 Originally from Andalucia (Jaen), it produces an oil with a slight fruity scent and a pepper touch. It offers a range of complex flavours, with chocolate and nutty touches. It is an excellent oil for meats and stews and its sharpness makes it perfect for salads and gazpachos.

Originally from Andalucía  (Malaga), it produces an oil with a sweet scent and a slight pepper touch. Thanks to its soft and light flavour it is ideal for frying (potatoes, fish…) It is also widely used both in stews and pastries because it produces exceptionally light doughs.
